World Health Day 2015: safety of food products

History of issue

The unsafe food products relate to the death of approximately 2 millions people every year, mainly children. The pathogenic bacteria, viruses, parasites or chemical substances that are contained in the food are the reason for more than 200 diseases, from diahrea to cancer.

The new threats to safety of food products appear constantly. The changes in production technology of food products, in distribution and consumption, environmental changes; new and again appearing pathogens, bacterial resistance – all these factors create the problems for national systems for safety of food products. The activation in movement of population and trade reinforce the probability for international distribution of unsafe products.

Safety of food products – topic of World Health Day 2015.

As the supply sources of our food products are mostly globalized, it becomes more and more obvious that it is necessary to reinforce the systems of food products safety in the countries themselves and in relations between all countries. Due to this reason WHO assists to efforts, directed to reinforce the safety of food products on the way from the farm to the plate (and everywhere at intermediate stages) during World Health Day on 7, April, 2015. According to the Codex Alimentarius, which is the collection of international standards, guidelines and codes of food products practice that cover all main kinds of food products and processes, WHO helps the countries to prevent, to detect and to react to outbreaks of diseases that are transferred with food products. Together with Food and Agriculture Organization of the UNO (FAO) WHO warns the countries about emergency circumstances in the sphere of food products safety through international information network.

Five principles of food products safety

The food products safety is the joint responsibility. The safety shall be provided along the whole chain of food products production, starting from farmers and producers and finishing with sellers and consumers. For example, the publication by WHO “Five most important principles of safe food” contains the practical guideline for sellers and consumers in the sphere of food products processing and preparation:

•  Principle 1: Keep products clean
•  Principle 2: Separate the raw products from products that passed through thermal treatment
•  Principle 3: Undergo the products to thorough thermal treatment
•  Principle 4: The thermal treatment is held at necessary temperature
•  Principle 5: Use the safe water and safe raw products.
World Health Day 2015 enables paying attention of those ones, who work in different governmental sectors, farmers, producers, retailing, medical workers, as well as consumers to importance in food products safety and the role, which everyone can play to provide with such position, when every human may be sure that the products in his/her plate are safe for consumption.
